I wanted to play against my son taking turns, but only seem to be able to play against the console itself. Is 'hot seating' only available with some games, or have I just not set the DS up properly?

I hope this helps. You can not play as two players with this game unless you have two consoles. There is not a setting on the DS console to 'set up' as it does this automatically depending on the game.
