I have hundreds of cookbooks but from a technical viewpoint this has to be the best book i have read. The brothers use most of the modern techniques in recipes that can be followed by good cooks and restaurant professionals. The food combinations are inspiring and i have made a few of these dishes using close relatives of those in the book and feel much more confident with using the equipment mentioned in this book. The lobster with forbidden rice was heavenly.

I was delighted to find a book about vitamins and minerals that was not just written for vegatarians. The appendix section is a great summary for pregnant women,weight loss, osteoporosis and the elderly. After reading this book you will revise what you eat. This book recommends the best sources to get the vital nutrients we need and how thetype of food makes the differences in how much is absorbed. The appendix section summarises the changes we need to makeespecially when we are pregnant or getting older. I was so absorbed i read the whole book the day it arrived.

Normally when i purchase a book i rate it highly if i can gain at least one new concept from the book.With this book there are many. Although i have only had the book for a short while several ingredients made using Mark's techniques have been used in dishes that i have made with lot's of appreciation. For example, the vadouvan (French curry powder) i used to make some chicken curry. This tasted so much better than standard powders or pastes. Some of my extended family are now looking at buying a dehydrator. I cant wait to make the sauterne custard.
