This book is very precise and informative and has taught me a lot about the art of pastry.
However, ALOT of the recipes do not match the photographic instruction making it very confusing when presentation is key. Also too many of the items have incorrect methods and mismatch the ingredients.
What a shame... so much potential...

As stated in other reviews, this is the AMERICAN VERSION, which uses whole notes, half notes etc instead of semibreves and minims...
I have recommended 13 new students to purchase this book and recommended amazon due to cheapness... and now I have to explain to each parent that every time it says one thing, I have to scribble it out and put another.
It's not as if teaching new students notation is confusing enough for them already.
Poor show amazon.
As for the book, it's the best course for beginner pianists, great pace and really enjoyable duets that the kids love.

This book is absolutely stunning. I had been losing faith in Heston with his every so slightly gimmicky TV shows of recent past. However this book has completely restored my faith in him.
I have been inspired more by this book than most on my book shelf of 100. Yes the recipes tend to take a lot of time and some use not so traditional methods, but everything is backed up with reason and each technique has a through explanation, each of which make you excited to use what you have just learned. Moreover, every recipe is possible at home (which maybe the exception of a few sous-vides and dry ice items) and will achieve great results.
