The book is extremely detailed about this issues and has some very handy hints. However I didnt finish the book as it got quite depressing to read all the stuff that could go wrong. I think it is a good reference source to dip into though
I have Phil Vickery's first gluten free cook book which is very good. Was disappointed in this one as it just more sweet recipes and I would have prefered it to have had more savoury options as alternatives to bread. There are so many books and downloads for sweet recipes that I feel the savoury options need to be expanded more.
