I enjoy Mark Hix books . I think this book is great. Yes he uses some hard to come by or expensive ingredients for the average cook at home, but with a little imagination and confidence replace or change them for a lesser or cheaper product. A recipe is only a guide.
In the kitchen my style is rustic , and I believe in simple and done well. I think all Mark Hix books are a must for any cook - be proffessional or at home.
