The casual manner in which shark is used as an ingredient in the "Shark with Tropical Salsa" recipe is unforgivable.
Sharks worldwide are dwindling in numbers. Shark fisheries have reduced the iconic, 400 million year old predator the great white shark by 90%. As previous comments have stated, might as well be "Giant Panda with Tropical Salsa".
The consumption of shark should in no way be encouraged. If this was an ethical and intelligent cookbook, the authors would take great care to select ingredients from the sea that are sustainable. Its not difficult, there are various programs out there that research fisheries and compile what are good choices to eat for healthy oceans. Check out Ocean Wise, they do all the hard work in figuring out what are the best choices. Let me tell you, shark is not one.
