Manual of a Traditional Bacon Curer, 9 May 2010
Very very good book but a lot of the recipes are on an almost commercial scale so will need a bit of working out for home use in terms of quantites etc. Excellent for anyone thinking of taking this up as a business. Sections on butchering pork, ideal workshop, smoke house design etc. (all commercial) plus many recipes. It's an educational manual rather than something like a cookbook, which is exactly what it say it is.
