I found this in a second hand bookshop and I love it. James Kempston writes in an informal, yet informative style. He teaches you tips and tricks for better cooking but also to follow your own instincts and be creative with the food you cook. (hence the title). He references Harold McGee many times and well before Heston B made the "science bit" of cooking fashionable. (this book was published in 1993)

Publishers take note: Please republish this great book and give James Kempston the recognition he deserves!

this book has been a mainstay in my kitchen since I bought it a year ago. Its is more for technique than recipes, and there is almost every technique in cooking that I can think of. The recipes that are included are often "signature dishes" of the contributing chefs which is great, plus lots of step by step photos which I think is very important when learning a new skill.

The dark chocolate mousse recipe in there is simply sublime...and works every time..!! Try it and you won't be disappointed...plus it only takes 1 hour to chill...!

this is not going to fit the true 17" widescreen laptops (certainly not my new toshiba p200 143) ,,,the label says "up to 17" widescreen". Its a great product and well made, wish they did a larger one!
