Can stainless steel knives be dishwashered and is stainless steel 100% rust proof?

A. Contrary to popular opinion, stainless steel is not actually 100% rust proof. Chromium is added to steel to increase its resistance to oxidization ( rust ) however environmental factors can lead the stainless steel to rust.
These factors are namely salt ( the main ingredient in dishwasher detergents ) which is highly corrosive and fruit acids. If stainless steel comes into contact with these substances then you are advised to wash and dry your knife as soon as possible after use.
This is why we recommend that knives are not left in the dishwasher over night or for long periods, as the humidity levels coupled with the salts ,will spot rust any knife over a period of time.Knives should also not be left to dry naturally over night .Knives should always be washed under running water and hand dried with a towel and put away soon after use. This will guarantee that a stainless steel knife will never ever rust.

Q. How do sharpening steels work?

A. Sharpening steels work by straightening out all the microscopic dinks and nicks on the cutting edge of a knife. 
However, steels are not guaranteed to resharpen any knife all the time.
The effectiveness of a steel depends on technique used ( many tutorials are available to view on youtube ) and the thinness and quality of the steel of any particular knife.
If a knife is correctly sharpened on a steel and still does not have a sharp cutting edge then it is almost definitely time to have your knives professionally reground.This regrinding thins down the cutting edge of a knife transforming the edge from a U shape to a V shape.This enables your sharpening steel to be effective once again.

Q. Diamond steels and how best to use and maintain them.

Diamond steels work in a slightly different way to conventional oval steels , in as such as they are coated with a fine grain of man made industrial diamond dust particles  very similar to fine sand paper. Diamond steels mark with use. This is normal. The abrasiveness of a diamond steel becomes smoother also with use. This again is normal.Diamond steels should be kept dry at all times and never oiled or washed.Only the flat sides of a diamond steel should be used for sharpening a knife, never the edges.
Q. How long does a diamond steel last?
This depends on frequency of use, technique used and condition ( thickness of cutting edge ) of knives being sharpened.
Providing all of the above are optimal, domestic use should ensure a life of at least 5 to 10 years. Commercial use much shorter.
As the diamond steel ages, it does take longer to sharpen a knife. This is true of all types of steel.
