Bakeorf says:
Maybe more a smidge more baking powder and higher oven temp so that they rise quickly and cook on outside but inside is still liquid and rising so the outside bursts? Think you will need to experiment to get the effect you like. I recommend Muffins Fast and Fantastic by Susan Reimer. She explains why muffins work and what each ingredient does along with substitutes. Is excellent book and recipes are all brilliant.
