The name Chef's choice made me think this would be a semi-professional knife.

Unfortunately it certainly isn't and feels very cheap and light.

As far as sharpening I was very dissapointed.

I have a carving knife which was very blunt (hence the reason I bought it) and after sharpening for some time I found it to be no sharper at all.

Anyway doesn't sharpen and feels cheap and I recommend you look elsewhere.

I must say I was a little concerned about buying this after seeing the other reviews, so I did a lot more research on the 'net. Chef's Choice (Edgecraft) are by far the biggest supplier of knife sharpening equipment in the world, their products are available everywhere, I don't think they would have remained in business if their products didn't work.

I used to sharpen all my knives with a specialist Lansky Sharpening system, which took ages. This gets all my kitchen knives razor sharp in seconds! Even old really blunt knives take 50 strokes in slot 1 and then another 20 in slot 2 to get them back into shape.

I can only assume that the other reveiwer had a faulty one.

Very very easy to use, ultra quick, ultra sharp - Highly recommended.

I ordered this item as I was fed up with trying to get a good edge on my wife's collection of knives using a medium quality sharpening steel. Possible, and good for shedding calories, but very time consuming. I think I could have accepted the rather lightweight and "plasticy" feel of the sharpener IF it had worked as described. But after twenty minutes or so on two different knives I had made very little - if any - progress towards obtaining a good sharp edge. I also made sure I was following the instructions to the letter - not too much weight - keep it running against the rollers - don't move to the second stage until you have got it reasonably sharp with the first stage etc. It may be that this tool will keep a good edge on a knife if the knife is sharp in the first place - but that really negates the reason for buying it. My advice? Don't waste your time and money!
