This is an attractively produced compilation of recipes from chefs of 21 restaurants in Edinburgh. They each begin with an introduction by the chefs themselves - potted autobiographies which give a flavour of their approach to cooking. The recipes have the merit of being easy to follow,quick on the whole to do for life in the frenetic modern world - even the slightly gentler pace of the Athens of the North. They concentrate on the best of Scottish produce, namely fish, beef, game, venison, but are varied enough to include the Chinese and Indian representatives who have always been strong in Edinburgh. Puddings do not miss out. This is not a book to read when you are feeling hungry, your mouth will water, and you will rush to make a reservation at one of the restaurants in the book.
