Product Description

Lactose is the primary sugar found in milk. Digestion of lactose requires the enzyme lactase, which breaks lactose into simple sugars. When the intestine produces little or no lactase, milk sugar is not digested. New-born babies require high intestinal lactase levels for survival. Later in life though about two-thirds of all people lose the ability to procuce lactase. Most of the people who keep producing it throughout adulthood are those of European ancestry but in other ethnic groups - Mexican, Jewish, African, Asian and Native American - 75 to 100 percent of adults are lactose intolerant. Primary lactose intolerance may begin at any time but usually develops in early adolescence and continues through life. Lactose intolerance means avoiding foods such as cream, butter, yoghurt, and ice cream as well as many prepared foods to which lactose is added such as bread, ceral, salad dressings, cake mixes, and frozen meals. This book explains all you need to know about this condition, how to tackle the problem and where to go for help and advise. As with the other titles in this "Everyday" series the book contains 200 recipes for family meals and there is a special section on catering for children. There are recipes for soups, dips and starters, light meals, main dishes, fish dishes, vegetarian dishes, savoury sauces and accompaniments, salads and dressings, puddings, sweet sauces, sweets and treats, baking, pastry, breakfast, and beverages.

This book was recommended to me by a friend and I agree with her that it is a great book with fab recipies. The whole family can eat them without even realising they are dairy free. We have tried lots of the recipies and liked them all - even my fussy children. We particularly like the creamy chicken korma and the wicked chocolate cake! This is the best dairy free book I have bought. Well worth the money.

The Everyday Dairy-Free Cookbook is well set out, simple to use, explains dairy allergies plus intolerances and contains tasty, easy recipes that everyone enjoys.

What more could you want?

It has enough nutritional and allergy information but lacks the heavy, bogged-down feel of some other books. The recipes take their rightful centre stage!

The practical, but tasty recipes can transform meals back into pleasant experiences!
There are also handy tips for eating out/away from home.

The yorkshire pudding/toad-in-the-hole recipe never fails.....

There is a handy list of calcium concentrations in other foods, such as some vegetables. There is also a good list of brand-named replacement foodstuffs that you can trust to be dairy-free.

The 'is soya harmful to/ or good fore your health' debate is touched on in here and alternative milk substitutes to soya-'milk' are mentioned :-) . (Surprisingly soya allergies are not stressed; but hey; you can't have everything!)


((It's not within the scope of the book, but just a reminder from me that soya production = airmiles + rainforest destruction))

I really like this book...Before reading this book I couldn't immagine you can even make a cheesecake without milk! Many many recipes, quite easy to be prepared! The only two negative points that I can make are 1) some recipes are done with totifutti soia cheese, that is impossible to find in italy (and I really don't know how to substitute it) and 2) very few pictures of the dishes (while it's always good to have an idea of how your dish should look like)!
