An invaluable Reference - Recipes, Varieties, Histories and Cultivation, 27 Feb 2007
`When it was originally published The Essential Olive Oil Companion' was the very first book in the English language to be written on this extraordinary fruit. Since then it has never been out of print, selling all over the world as well as being translated into foreign language editions. It has established itself as the bible on the subject, covering the ancient history of the tree, the olive and its oil...........
Little has really changed in the production of fine quality extra virgin olive oil since ancient times but enough has changed in its place in the world market and its position as a gourmet ingredient to make a new edition of this much cherished and highly acclaimed work necessary.
It has been brought right up to date to enable it to remain the best and most accessible book on the subject.'
159 high quality, shiny pages, split over main chapters:-
Spain, Italy, France, Greece, North Africa, The Americas, The Rest of the World.
Sections also on:-
The Olive and the Ancient World
The Olive Tree
The Fruit of the Tree
Tasting the Fruit of the Tree
Olive Oil and Health
Olive Oil in the Shops
Interspersed with charming colour illustrations.
Each main chapter opens with useful notes on the region and the types of olive that originate there, followed by the recipes.
Recipes (foreign name plus English, if applicable) include:-
Salad Nicoise
Ratatouille
Mayonnaise
Vinaigrette
Aioli
Daube de Boeuf a la Provencal
Fish Kebabs
Imam Bayaldi
Avocado & Grapefruit Salad
Beef with Almonds & Olives
Gazpacho
Marinated Black Olives
Caponata
Pesto
Guacamole
Orange Almond Fig Cake
Pizza alla Siciliana
Helpful notes are included in each recipe, e.g.
`Salmoriglio' (Olive Oil, Lemon and Garlic Sauce)
`This is a simple Sicilian dressing for grilled fish, usually swordfish. It can be served hot or cold and I use it sometimes as a salad dressing.'
Each recipe also has a clear list of ingredients and a method.
