Product Description

From the Publisher
From Martin Yan's foreword
"Corinne first came to visit me at my cooking school in northern California, and instantly I recognized a talented individual with a most unique approach to and outlook on food. Her multi-ethnic background has given her a unique perspective not only on French and Vietnamese cultures but also on Chinese and American. Corinne is most articulate in voicing the many international influences that Vietnamese cuisine has benefited from and the many contributions that Vietnamese cooking has made to the West as well as other Asian cuisines. Through Corinne, I have gained a whole new perspective on Vietnamese cuisine."

From the Author
Vietnamese cooking revealed
In Authentic Vietnamese Cooking, I share over 100 of my family’s favorite recipes. Through step-by-step, easy-to-understand instructions, you too will be able to prepare the regional foods of Vietnam including condiments, fish, seafood, poultry, meat, and vegetable dishes. Learn to make classics such as cha gio (spring rolls), pho (Hanoi’s famous rice noodle soup), cari rau cai (vegetable curry), tom nuong xa (grilled lemongrass prawns), ga kho gung (braised chicken with ginger), and banh gan (coconut creme caramel). These foods are delicious, well-balanced, and beautiful when served. Perhaps the healthiest of all Asian cuisines, Vietnamese cooking offers steamed, stir-fried, and braised dishes complimented with medleys of copious fresh herbs. An enormous variety of exciting foods mix sweet, sour, and spicy flavors, creating some of the most refreshing combinations in any cuisine.

To help you understand the cuisine and its people, I have also filled the book with historical, cultural, and personal anecdotes. Authentic Vietnamese Cooking is also a shopping guide, including beautiful photographs and thorough descriptions of ingredients. It’s easier than ever to identify and find essentials like lemongrass, cilantro, ginger, shiitake mushrooms, and fish sauce, all of which are available from supermarkets, mail-order sources, and the ever-expanding Web. In no time at all, your friends and family will be impressed with your new-found cooking abilities!

But enough words, let’s start the new millennium by exploring a healthy and exotic lifestyle. It’s time to roll up your sleeves and start cooking. And I’ll be with you every step of the way.

4.0 out of 5 stars An excellent introduction to authentic Vietnamese cooking, 8 Mar 2001
By A Customer
I have found this book a very good source of ideas. The recipes are simple and easy to follow, even if some of the ingredients are not always readily available. My wife also uses it a lot - she is from Hanoi and quite particular about her national cuisine.

4.0 out of 5 stars Don't spare the Fish Sauce!, 5 Feb 2005
This is a lovely book with masses of recipes, and is illustrated, but, the photos that are in the book are largely for ambience and used in the introduction, at the beginning of the different chapters, and randomly spread out throughout the rest of the book, and do make the book pleasing, and they would, probably go amiss if they were absent, but there are no, or very very few images of the dishes themselves(and those that are included are usually indirectly placed), which is a bit of a disappointment, but doesn't negate the fact that this is a lovely book, with many fine recipes. Another comment I must make is the fact that the recipes are only in American measurements (but, usually in cups), however, there is a conversion table at the back of the book, so it makes up for it there.

The contents of the book itself contains pretty much everything you'll need to know, including ingredients, (in different groups, Rices, Fresh ingredients, Dried, Canned, etc, etc.) Techniques (including how to use chopsticks!!), Utensils list, and so forth. The recipes are then spread out through 7 chapters, from Condiments, Soups, Rice & Noodles, Vegetables, Fish, and so on, with the recipes themselves being well formatted, and easy to read, with the name of each recipe given in both English and Vietnamese and also include a paragraph for each dish. Finally, at the back of the book a 'seasonal menu' which includes (obviously) 4 sections, with serving suggestions for meals to serve 4-6.

All in all, smart book, missing a few elements, but on the whole, it carries itself off quite nicely.

5.0 out of 5 stars Authentic cooking, 2 Jul 2006

I agree that this book could do with a few more pictures - it always helps, particularly if you are not completely familiar with the cuisine. The recipes I have tried have been delicious - the beef pho was very tasty and I liked the spices used for the stock. Her recipes and style of presenting the dishes seems to match what I have seen on Vietnamese food blogs.
