I use this book a lot. I find its the perfect 'fast' food for mid week, particularly if I haven't organised anything to cook. Or more so if I've got a fridge full of ingredients that were well intended for another meal but never quite happened. While it takes a little while to cook a risotto, I tend to think of it as fast food as there's little preparation and it's very easy on a work numbed mind.

The great thing with risotto is that there are so many things that you can use in them and this book gives lots of ideas on different combinations. It's also the perfect winter comfort food. Our favourite risotto recipes; Asparagus, Peas and basil, pumpkin risotto; country risotto, fennel and lemon risotto, chestnut risotto, lemon & mint, mushrooms cognac & cream, wild herb risotto. There are over 30 risotto ideas, so there's probably something for everyone in there.
