Boy, Oh boy, a cooking book not like other cooking book...
This is the cooking book I dreamed of and never saw coming... until now. Without scaring you off or spoiling it, it is written a bit like a good book on programming language! Why, simple, instead of giving you a mindless quantity of recipes which includes dozens of ingredients which you will never use more than once, Alton explain you own to use the ingredients in order to unlock your creativity.
As Alton Brown says: "Cooking is not defined by seasonings ... it is defined by the application of heat." That explains why the chapters are devoted to single heating method (searing, grilling, roasting, frying, boiling, and braising).
This book is THE ONE TOOL for those who want to become cooks and not simple recipe followers...

Great book, more a book of learning 'why' than 'how', but has lots of how in in it. I'd buy it for the searing alone, but what I really like is its one page per receipe, with learning and the tool you need and ingredients kept seperate, plus lots of laughs alone the way. Good book, plus as you've learnt 'why' you can really adopt it into UK tastes :-) will be buying the baking one now :-)
