The Argentines grill more meat per capita than any nation on earth. Francis Mallmann was raised in the mountains of Patagonia, trained in the great kitchens of Europe, and returned home to become the top chef in Buenos Aires and the biggest star on South American food television. In 1995 he gave up cooking fancy food and applied all the lessons of haute cuisine to maximizing flavor and texture with wood-fired cookery. His food is astoundingly bright and vivid with burnt, crusty tastes both rustic and refined. Recipes range across the menu, including non-grilled recipes for what to eat while you're building the fire. Most recipes are adapted for cooking indoors, so this is a cookbook for any season, any kitchen. Francis' seven fires are: Chapa - a cast iron griddle or skillet (the form most used in this book); Little Hell - cooking with fire above and below the food; Parilla - basically what's called barbecuing or grilling in the US; Horno de Barro - cooking in a wood-fired clay oven; Rescoldo - cooking food by burying in hot embers and ashes; Asador - cooking whole pigs or lambs affixed to an iron cross that faces a bonfire; and, Caldero - cooking in an iron cauldron or Dutch oven.

The care of the author to explain in methodical and systematic detail all the aspects and steps that conduce to the use of different cooking instruments is truly remarkable. He explains beginners how to make a proper fire; how to make the most of the ambers; how to maneuver in a clay oven; how to take measures with protecting the fire to avoid any mishaps; and it goes like that with everything.

Excellent photography taken during his Patagonian stays, place the reader in the right climate.

The book develops a very complete recipe book of dishes that can be prepared from a variety of fires. The chapters are divided in Appetizers, Beef, Lamb, Pork and Chicken, Fish and Shellfish, Vegetables, Light food and Salads, Desserts, Breads and Basics. The latter being a thorough description of the necessary tools to practice this type of open-air country cooking.

Francis Mallmann is an Argentinean cook. He was one of the regional exponents of the nouvelle cuisine. More recently he adopted a more rustic type of cooking. In 1995, he was awarded with the Grand Prix de l'Art de la Cuisine given by the Académie Internationale de la Gastronomie.

Elegant, sophisticated, creative. Developed by a brilliant chef, this is the most refined grilling book ever written.
