Product Description

Synopsis

Japanese and vegetarian food expert Miyokko Mishimoto Schinner presents traditional Japanese dishes and regional specialities from Kyushu in the south to Hokkaido in the north. She draws from the tradition of vegetarian cooking in Buddhist temples, as well as the vegetable-based dishes found in traditional Japanese cuisine. For dishes usually prepared with meat, fish or fowl, Miyoko has created innovative substitutes utilizing vegetarian foods like tofu and seitan, to create recipes suitable for vegans.

5.0 out of 5 stars Taste Of Japan, 16 Jul 2002
By Julie A., Karinshak (Columbia, Maryland USA) - See all my reviews

This is a great book, because it's more than just recipies. The author goes through great lengths to explain potentially new ingredients and cooking techniques, as well as, traditional and non-traditional recipies made vegan. She also, explains how veganism is looked upon in Japan.
Good recipies end up being an added bonus.

4.0 out of 5 stars Good overview, 26 April 2009
By Ms. Carrie Van der Zee (Nottingham, UK) - See all my reviews

I bought this book 6 months ago and in that time it's been very well used. The recipes are, on the whole, very easy to follow, quick and easy to prepare, and always taste good. The "Almost Instant Ramen" recipe is a particular favourite of mine - oishii!!!

As stated by a previous reviewer, the book contains no colour and no pictures, but I do not personally find this to be a problem. The recipes that call for preparation that is difficult to explain in words are accompanied by diagrams, and the pages are laid out in a format that is easy to digest and aesthetically pleasing enough.

The only downsides to this book really are, firstly, that all of the measurements are imperial rather than metric to cater to the American market. I chose to get around this by buying a cheap American measuring jug and a set of cup measures, however as the book was to be published in the UK as well as in the USA it surely wouldn't have been too difficult for the publishers to include metric measures with the recipes? Secondly, as the author is an advocate of making your own meat substitutes, a significant handful of the recipes call for vital wheat gluten, which I have found impossible to obtain in the UK without buying it in vast quantities as a trade customer- therefore there are several recipes I cannot attempt.

In all, though, a very nice book with some really tasty recipes.

So yeah I've just got back from living in Japan and being vegan having to cook everyday and veganising many favourite japanese dishes. The recipes are good and the explanations are nice but...
