I spent some time in The Gambia last year training chefs in a hotel resturant. Before heading out there i found this wonderful book on African cooking. The trainees out there were amazed and enthralled to discover a cook book with food they all knew in it, but presented in such a way to suit the tastes of the Western tourists. They were immediately inspired to begin creating dishes of their own. This just goes to show how accurate Elizabeth Jackson is with her recipes. I look forward to reading more from her.

This is one of the better cookbooks out there. The instructions were easy to follow during cooking and there is plenty of good information about the ingredients. I liked that there were color photos of a lot of the dishes, as well as a map and pictures of West Africa.
