4.0 out of 5 stars Serving up good advice, 1 Aug 2003
When purchasing this book I expected a long, narrative style journal from an experienced restrateur. Imagine my delight when I first opened the book and found an extremely concise and informative textbook style offering. This was exactly the type of book that I wanted. I found the author's style of writing very fresh and unhindered by excessive detail. This really is a practical book for anyone thinking of getting into the business. It is not a substitute for experience by any means but it does give the reader a good flavour of how a restaurant should function on a day to day basis. As a result of the fluidity of the chapter structure it is possible to get through the entire book in one afternoon. I would recommend reading it right through with a pen in hand and marking what you need or find especially helpful. All in all a good purchase and perhaps an ideal christmas/birthday present for the young entrepeneur or retiring bank manager.

5.0 out of 5 stars I'D GIVE IT TWO THUMBS UP, 21 Mar 1999
By A Customer
I wish there was a book like this when I started out in the business. It would have made life a lot easier. It goes over the whole procedure of starting a restaurant in a logical, easy to understand way. Gives lots of examples of things that can save you time and money. Has a strong chapter on preplanning. That's the best time to avoid the mistakes that can bankrupt a restaurant later on. Takes you from the business plan right through the grand opening. A very wise investment, for the small cost.

5.0 out of 5 stars Very well structured and details-oriented book:excellent buy, 2 Jul 1999
By A Customer
I wanted a book that would give me good insights in the operations side of the restaurant business. I haven't been disappointed. It guides you through the main topics any future restaurant owner will have to deal with and for each section, gives tips, examples, key figures/indicators to look at, etc. Very good first investment to mention in your business plan !!!
