4.0 out of 5 stars An inspiring introduction to polenta., 5 May 2001
By A Customer
This beautifully illustrated book is a must for all lovers of corn-meal based cuisine.

Having recently moved to Islington, I felt all at sea in the dinner party circuit until I discovered this revelatory book. Thanks to Ms Legere Binns' fervent culinary imagination and infectious enthusiasm, I was encouraged to prepare a four-course dinner consisting solely of polenta-based dishes, which went down a storm with my guests. Be bold and trust these recipes - experimental they may be, but they really WORK! One of the real eye-openers was her polenta waffles with grappa and a summer fruit compote, but the "luscious Anglo-Italian fusion" the book aims for may have been pushed a step too far with her recipe for polenta-in-the-hole, which to my mind was just plain stodge. However my only real misgiving is that the section on polenta wines is not more comprehensive.

Give polenta a try - you'll surprise yourself.

Susie Risbridger, London N1

3.0 out of 5 stars Bland blending, 10 May 2001

A disappointing follow-up to Brigit's first foray into carbohydrate culinary concoctions: "Cous-cous: against the grain". This represents a departure from her usually exciting explorations into starch. Let's hope the third title in this series, "Sumptuous Sago", returns to her normal verve!
