Rosemary really has done it again. With this sequel to her best-selling
Low Fat Cookbook she has produced a collection of straightforward, modern recipes in which the "low-fat" aspect really does appear secondary to taste. The
Low Fat Cookbook 2 opens with a chapter outlining why we might want to lose weight, calorific intake tables and a breakdown of the components that a healthy, long-term diet should contain. What Rosemary proposes isn't actually faddy or extreme in the slightest; readers of
The Red Wine Diet will know that even alcohol is allowed--in moderation. In fact good sense and moderation is the key throughout.
The extensive recipe section contains lots of useful everyday suggestions, including meals for one, microwave meals and recipes that take about half an hour to prepare from start to finish. These are really quite adventurous: "Grilled Sausages with balsamic shallot sauce" "Aubergine and Lentil Rogan Josh" "Marinated Gammon with apple and cinnamon sauce". There is fun food for kids that is easy enough for them to assist in the preparation--teaching them sensible eating habits at an early age. And some of the most welcome suggestions appear in the section of "Family Meals". All too frequently people embark on a strict diet which means eating differently to the rest of the family which inevitably means that it is impossible to stick to. The recipes here, however, are well balanced--there are plenty of vegetables and vegetarian recipes--so it would make sense for all the family to be tucking in. There are ideas for entertaining and a number of great desserts: "Baked Pears in Chocolate Sauce" and "Banana Custard Tart", for example. All in all, this is great collection and a worthy sequel to her previous best-seller. Anyone who enjoyed the original Low Fat Cookbook should relish the chance to extend their repertoire to include some of these nutritious, simple and most importantly, tasty meals. --Rachel O'Connnor
