Tapas, that wonderful Spanish habit of taking a few vivid mouthfuls as appetiser with a glass of wine or sherry before getting down to the serious business of eating, is more a mode of thought than a coherent cuisine or set of recipes. This, at any rate, is the message of Louise Pickford's Tapas. Purists might gasp, but once she has thrown the constraints of Spanish authenticity to the winds, the world, so to speak, is her oyster. This is modern, cosmopolitan tapas with a vengeance. Categorising her little dishes basically by number of mouthfuls (One Bite, Two Bites, Bigger Bites ... ), she pulls together from all over the world a savoury collection of appetisers and snacks to suit all occasions. From the simplest, such as Marinated Olives or Salted Almonds, to the elaborate, such as Picnic Chicken Loaf or Deep-Fried Ravioli Pockets, they're full of flavour and consistently imaginative. Oriental influence makes itself felt in Thai-Style Mushroom Kebabs and Chicken Sate, while Mediterranean flavours appear in Souvlakia and Piedmontese Peppers. There's even a dash of Eastern European, in Piroshki. Spanish flavours do get a look in, though, with the likes of Spanish Tortilla and Potato Bravas, both very traditional tapas dishes.
