Nick Nairn's recipes are a glorious mixture of the simple and complex. The more advanced dishes need a degree of preparation, forethought and experience, but the results are superlative, and his style is light, clear and unpretentious. One of TV's less well known chefs, but very much amongst the highest rank. Thoroughly and unreservedly recommended.

For the more adventurous here's a book written in plain English by a self-taught chef. Nick Nairn writes with a pleasant down-to-earth tone, assuming nothing and avoiding condescending comments often prevalent in "fancy" cookbooks. Excellent recipes from starters to puddings for the dinner party with a difference or for just making something special like the Nick Nairn version of steak and chips. Excellence source of information on making stocks, sauces and breads.
