I have had this volume for several years, it is still one of those books I turn to most often for a view of the world, as seen from the small French family restaurant. Some of the recipes have become staples for me - like Shepherd's Pie French style (Hachis Parmentier) made with stackloads of parsey and then gratinee.

Whether you follow the book exactly (all the recipes work) or you use the ideas as inspiration, there is a satisfying variation of foods and techniques. By focussing on the less elaborate preparations, it fills a niche somewhere between the "this is how you cook an egg" and the "now stuff 30 fresh peas with the prepared farci" book.

Mireille Johnston was such an inspiration, I first knew of her only from this book but have since read her obituary by John Whiting and have been bowled over by her acedemic achievements and fascinating personal history.
This book is always on hand, the recipes are delicious and her writing is a simple pleasure in itself.
