I originally bought this to cut cheesecake in a non-stick springform pan. It surprised me at how well it cut the cheesecake slices - just like a traditional sharp knife but without damaging the non-stick surface.
So now I use it whenever I need to cut anything in ANY of my non-stick pans, cookie sheets, whatever. This knife is amazingly great and quite useful. No worries with cutting anything in a non-stick pan since it won't cut into the non-stick surface.
BTW, I haven't tried cutting lettuce with it.

I purchased these knives for the kids' cooking classes that I teach. They cut great and are kid safe. The only thing I didn't like is that they are a little slippery on a plastic cutting board. On a wood board, they are a great kid-safe knife.
