Many fear it will stick and burn when actually this is far from the truth. Stainless steel cookware will offer years of service whilst still maintaining an immaculate condition. Those who have tried and tested stainless steel cookware will testify its all about knowing how to cook with it.
The WMF Guide to Trouble Free Cooking with Stainless Steel:
Never add salt to water in a stainless steel pan unless it is boiling.
If salt is added when the water is cold, it will not dissolve. The salt will sit on the bottom of the pan acting as a corrosive until the water is hot enough to dissolve it. This is the main cause of staining to the inside of stainless steel pans. This staining will not affect the performance when in use but clearly spoils its appearance.
Never let gas rise up the side of stainless steel cookware.If a gas flame is allowed to rise up the side of the pan, it will discolour the outer finish which is almost impossible to remove.
Tips for Frying in Stainless Steel:
1. Never attempt to fry anything unless the pan is very hot.
2. Always heat the pan without any oil or fat, wait a few moments and test the heat by dropping a little water onto the base of the pan. If the water droplets disperse quickly the pan is ready for the oil or fat to be added.
3. Once you add the oil or fat into the pan swirl around the base and sides until completely covered. You should then be able to sear meat or stir fry vegetables without burning or sticking.
4. When searing meat in a stainless steel pan, even after heating up as advised sticking may occur. This is normal as the protein content reacts to the heat. After a few moments the meat will lift off naturally. You can then turn the meat to sear on the reverse side before turning the heat down to continue cooking.
5. If burning occurs fill the pan with water over the point where it is burnt. Gently heat and simmer until the burn lifts off with ease.
Stainless Steel in the Dishwasher:
Good quality stainless steel is dishwasher safe however over a period of time highly polished stainless steel can start to look dull. This can be avoided by removing cookware from the dishwasher before the drying cycle begins. Simply dry with a cloth, or to restore shine use the WMF Cromargan cleaner.
