I have owned this book for several years now and I always turn to it at Christmas for inspiration. Rose Elliot provides five festive menus which you can mix and match or adapt using other recipes in the book or from elsewhere. Each menu has guidance for preparing and freezing items in advance so you can have a relaxing Christmas Day! The book also contains suggestions for starters, main courses, vegetable accompaniments and party food. The photographs show how stunning these dishes can look when prepared.
In addition, the recipes are delicious and will make for a truly special festive meal which is completely vegetarian. She also gives information about how to adapt some dishes for Vegans.
I couldn't get through Christmas without it.

Was really surprised that one reviewer was disappointed with the Cashew Nut Roast in this collection of recipes.I have written out this recipe for countless friends and everyone loved it including non-vegetarians.I cook this roast frequently and always keep a supply in the freezer.

This book was originally published in 1992 but, compared to some of Rose Elliott's books, this one doesn't feel dated. Perhaps that is because it is dealing with pretty traditional fare which isn't impacted too much by changing tastes and ingredients. It is an excellent Christmas handbook for the vegetarian or anyone faced with catering for a vegetarian. There are six Christmas menus plus a wide variety of recipes to cover general Christmas entertaining including snack & nibbles, light suppers, etc..

Some of the menus are traditional e.g. cashew nut roast with all the usual trimmings or chestnut & red wine paté en croute or lentil-based yuletide ring or a savoury strudel. Other are more unusual such as a stuffed acorn squash as the main course. There is a decent collection of puds which should have something to please most tastes, ranging as it does from a light Christmas pud to several varieties of ice cream, rum-macerated fruits with coconut & lime cream, cinnamon torte and a nice lemon surprise pudding. Perhaps the best is the Christmas bombe - tangerine ice cream inside white ice cream. There is also a selection of baked goods including lovely cinnamon shortbreads and mini Florentines amongst others.

The menus have a useful countdown at the end so that you can plan ahead and prepare many dishes in advance.
