Since becoming vegan I hadn't cooked any Italian food- until now. At first it was because I thought it wouldn't be healthy (I was wrong), but then I realized that it would probably also be difficult or impossible to substitute the meats and cheeses with vegan ingredients and still make it taste good. I would have never thought to do things like blend tofu for ricotta, or create a cheese flavor with yeast flakes. highly recommended.

My family loves Italian food! But, the problem is that it can be really heavy stuff, and I like for my kids to eat healthy. We're not vegan or vegetarian, or anything, but I know that the food is healthier, so its a compromise. We can eat pastas and other Italian foods if we make them healthier. My wife just picked up this cookbook on our kindle, and she made one of the lasagnas the other night and it was fantastic!

Let's be fair, cookbooks usually are just instructions. This one earns high marks though for being both a good source of instruction and being a unique approach to cooking recipes that are hard to imagine as vegan. Creative ways to replace staple Italian ingredients without resorting only to soy and wheat gluten made this one a five-star cookbook for me.

I find this book good for inspiration but the quantities in some recipes are way way out and I've found myself looking the recipe up on the internet and kind of mixing the two to get it right. Another "niggle" is that a lot of recipes use "vegan" cheeses which is brilliant when you live somewhere where those can be bought but here you can't.
