A new edition of the Single Vegan, which has sold over 60,000 copies, which contains 30% new recipes
Often vegans, although they may be part of a large family, have to cook separate meals – this cookbook offers over 200 diverse and seasonal recipes to tempt the tastebuds.
The book is split into weeks – and has essential shopping lists for all the ingredients you will need for that week and then delicious recipes to follow. There is also a Spring and Summer collection and an Autumn and Winter collection so that the availability and freshness of ingredients is assured.
The recipes are both savoury and sweet, main meals and light snacks and have influences and flavours from around the world.
It is easy to get stuck in a cooking rut if you are preparing food just for yourself. If you live alone or are the only vegan in the family, help is at hand from top cookery writer Leah Leneman. In tune with the seasons, whether it is a cold winter's night or a hot summer's day, the recipes will always suit your needs. Leneman has also gone global, bringing in influences and seasonings form around the world to make this a diverse and delicious collection.
With weekly shopping lists to help you plan ahead and simple recipes, Leneman takes the hard work out of cooking. Recognising that vegans often have to cook for one, all recipe measurements are for a single portion but can easily be extended.
Leah Leneman's refreshing approach has made her a pioneer of vegan cookery around the world. Her books include 'Easy Vegan Cooking' and 'The Tofu Cookbook' also published by Thorsons.

Easy recipes for days you don't want to think too hard,

I'm puzzled by other reactions to this book.I like it because if I come in from work and need something quick, easy and tasty, and don't necessarily have much in the fridge, I can always find something in here. For me, the shopping lists aren't much use because I never use cookbooks in such an ordered way. But the recipes that are here always turn out well and I've made many of them several times. The thing I really like is that all the recipes are for one person which saves a lot of dividing, or making more than you need.

Overall, a really good book with loads of recipe choices... One of the best bits is that all ingredients are geared towards a meal for one, as opposed to the usual 'meal for 4' provisions that most cook-books make!I think the only mildy annoying thing is that, whilst care has been taken to maximise the use of ingredients over an entire week (even a weekly shopping list is included!), some mistakes are made (it's worth checking the weekly shopping list against what's actually required - there are differences from time to time!). Overall, a good book... shame I don't like dishes with nuts, which rules out a fair proportion!!!

As someone who: a) hates cooking b) is a fussy eater, this book has got me in the kitchen every night and trying new things! The best thing about these recipes is that they are so simple to prepare an idiot could do them. What usually puts me off cooking is the effort often required by recipe books to put things together. I recently gave up on a Rose Elliot book for precisely this reason, especially as all but one of the recipes I tried were so bland. Eurgh. What makes this book great is that most of the recipes are genuinely tasty, so the few that are a bit bland you don't begrudge because they were easy to throw together anyway. There's nothing worse than slaving over a meal for it to be a disappointment. I personally don't follow the weeks' recipes as they are laid out, I prefer to pick and mix, so any anomalies in the shopping list just wouldn't be noticed by me. Another reason the book is a success: not too many ingredients. Granted, some ingredients aren't stocked in supermarkets, but I discovered a health shop about 4 miles from where I live that stocks most of the 'hard-to-find' stuff. Even when I stayed at a relatives' in a totally different part of the country, I found a health food shop just 10 minutes' walk away with the relevant stock, so I think most people will manage to get hold of the bits and bobs. My only slight concern is the repetition of some of the ingredients. Most of the recipes I've tried have contained onion and many others contain mushrooms and soya sauce. But there are so many meals that I will prepare again, I can only be very glad I bought this book. The recipes are also an inspiration to try my own variations I whole-heartedly recommend this book to all vegans and vegetarians, who like me, want to eliminate dairy from their diet. I'm already looking forward to tomorrow's dinner...
