Book Description

2 April 2004
Elegant or simple, humble or classic, the infinite variety of pasta has established it as a contemporary staple and the original "5-minute meal". The first chapter of the book gives instructions for making your own fresh pasta, including specialist needs such as wheat-free pastas. The following chapters feature recipes for every occasion such as instant, light and healthy and pasta to impress. The recipes range from the simple and traditional fettucini all'Alfredo (with butter, cream and cheese) and classics with a twist like spaghetti al pesto do rucola (with rocket pesto) to the truly unusual such as gorgonelli ai tre sapori (with salmon, mascarpone and lemon) and linguine con vongole veraci e cime do rapa (with clams and turnip tops).

Product Description

The staple food of Italy and now a worldwide favourite, pasta lends itself to every situation - a quick 5 minute supper for those on the run, baked for family gatherings, in soups for a light snack. Combined with fresh vegetables, fish or rich red meat, it is a guaranteed choice for satisfying every palate. Celebrated Italian chef Ursula Ferrigno departs from her usual vegetarian-only recipes, including a meat-lovers to-die-for array of recipes - pappardelle with rabbit sauce, veal meatballs and chicken strangozzi with courgette flowers. For vegetarians Ursula shares her exquisite pasta concoctions such as pizzocheri della valtellina, pasta con calabrese and fish dishes galore. Tantalisingly photographed by Peter Cassidy, the book presents a visual feast of sumptuous ideas, each page offering fresh ideas on how to use this versatile ingredient. From fresh homemade pasta to dried, she shares her innate experience of this Italian speciality now so easily available. Gleaned from all corners of Italy, her dishes are redolent of the climate and the people, providing a healthy style of living so amenable to our everyday lives. - Lucy Watson --This text refers to an out of print or unavailable edition of this title.

4.0 out of 5 stars pasta fans 24 Mar 2005
This is a great book: enticing photos, useful tips, and recipes that you just might rustle up after a busy days' work (Spaghetti alla Carrettiera - 'in the style of the cart driver'), as well as the more sophisticated dishes (paparadelle with rabbit sauce), and unusually, soups and a dessert. Refreshingly Ferringo has nothing against pasta machines, and lots of time for dried pasta, and with specific instructions about how to cook the pasta and what kinds of sauce to serve with different shapes, the book will help pasta ignorami who want to get beyond spag bol or a stirring in a bit of pesto, as well as the pasta fan who, on the spur of the moment, bought some squid pasta in a deli and had no idea what to do with it (me!). It is not, as claimed, 'the ultimate book for pasta lovers' -- I wanted to go out and find out lots more about pasta, but it's a really enjoyable introduction.
