Very good selection of real Spanish recipes. Something else than the classic "Mediterranean" cooking. Instructions are very easy to follow and motivate to cook something different, easy, tasty and good.

I bought this book for my friend (who was a chef in UK) he loves cooking traditional spanish food as he lives in Spain, he is trying every recipe and thinks it is great, few ingredients, maximum taste!

During that time, she has collected hundreds of authentic recipes. Whenever I write articles on Spanish food, I almost almost consult Mendel's book to verify facts, check how dishes are actually made Spain, quantities, style, etc. Janet Mendel is the real thing and such a bona fide authority on Spanish cooking that top cookbook authors and Mediterranean food authorities such as Paula Wolfert often consult her. Until recently, here books were only available in Europe. How wonderful it is that they are now available in the US. ¡Ole!

Part of the reading list for a course in Spanish food from pre-columbian times up to the present.Authentic information and recipes of the real cuisine of Spain, creating an understanding of a national cuisine shared by a whole country, becoming traditional.A most interesting concept of national identity and what it means collectively to a population.
