5.0 out of 5 stars Truly traditional 3 Sep 2011
For anyone wishing to get to grips with Portuguese traditional cooking, this is a very good book. It is full of informative photos and the recipes are reasonably easy to follow. What I like best in this book is that recipes - main courses, snacks, desserts, cakes, and others - are grouped by region. For Trás-os-Montes, amongst others, there are five recipes for 'bolas', pronounced 'bowlas' - meat, salt cod, chicken and rabbit, smoked ham, and sardine 'bolas'. These make lovely savoury snacks. Is there anyone who knows of a book exclusively on 'bolas'?

This book is an EXACT translation to English from the original Portuguese cookbook. I compared it side by side with my mother's original Portuguese copy. But be warned! Some ingredients are still not translated into English and some measurements are old fashioned ( conversion chart enclosed on a back page). If I did not understand Portuguese I am not sure how I would know what the ingredient was. I am so pleased to have been able to obtain a copy of this book. It is a diffuclt one to find a contains many recipe "gems" from both the continent and the Azores islands.
