After the final Hobbit movie has done its box office how likely will it be that they will release a box set consisting of all three LOTR movies and all three Hobbit movies?

Probably yeah, but it will be superfluous by then for most. I am waiting for The Hobbit Trilogy box and will not be buying the separate movies.

I'm not sure about the US or other regions but I'm fairly certain that WB didn't distribute LOTR, so unless they buy the rights to the films for a mega Middle Earth set I don't think we'll see the two trilogies in one set.
