Product Description

Product Description

While traveling through France with a vegetarian companion, Marlena Spieler was delighted to discover an often-overlooked meatless French cuisine, rooted in regional traditions and preserved in the small, family owned neighborhood restaurants that are the soul of Gallic cooking. In The Vegetarian Bistro, she shares her delicious discoveries. Here at last are vegetarian recipes - some classic, others newly adapted - for the rich gratins, flavorful appetizers, warm salads, hearty soups, lusty braises, and homey desserts of beloved French bistros, from Paris to the northern regions of Brittany and Normandy and to the southern reaches of Provence and the Basque country. Illustrated with charming watercolors by Pierre Le-Tan, The Vegetarian Bistro brings the market-fresh bounty of regional French cooking into your own kitchen.

By Mr. D. N. Sumption VINE™ VOICE
Format:Paperback
I have many cookbooks, and I love cooking from them, but if there's one that I return to time and time again then it's this one. Partly because I love French food and am largely vegetarian (a fairly uncommon combination), but mostly because there is a huge and varied range of recipes described here, all written with a passion for the food, accompanied by short anecdotes ideas for variations.

True, the author is somewhat keen on her butter and cream, and the jacket photo of her should serve as a warning of what this can do to your figure, but you can freely take liberties with any of the recipes, substituting and reducing quantities as you see fit. And on the occasions when nothing but a complete blow-out on comfort food will do, well then use the whole damn block of butter and tub of cream, your taste-buds will thank you for it.

A cliché but... I cannot recommend this book strongly enough. It's wonderful, and has changed my cooking habits for life.

A brillliant book 4 Oct 2007
Format:Paperback
I bought this book for my wife just before we moved to France 9 years ago; she's still using it, and it's in the stand on the kitchen worktop as I write.
Superb recipes, good wine recommendations, and an entertaining read. Who could ask for more. And yes, the resulting food is authentically French in style.
