Product Description

Opening with a fascinating introduction to the rich culinary history, culture and traditions of the Turkish people, Ghillie Basan describes how years of war and migration have helped to shape the modern cuisine, from early nomadic Anatolian tribal practices through the dazzling Ottoman period to the modern table. Then follows a comprehensive guide to the equipment, ingredients and techniques used in the Turkish kitchen, including step-by-step sequences to explain the processes clearly. Beautifully illustrated with more than 450 photographs, and complete the nutritional notes, cook's tips and variations, this stunning book provides a tantalizing insight to an ancient and diverse cuisine.

This book contains some of the information and rather less recipes than Ghillie's earlier and far more comprehensive The Food and Cooking of Turkey. There are plenty of photographs of the food plus some relatively unexciting stock pictures. It's not that much more to get a very much better book than this by the same author.

Fantastic! 14 Jun 2011

Format:Paperback
I have bought many Turkish cook books over the last few months and this was by far the most informative. I live in Turkey but learned so much more about the culture etc from this book. I'd been eating things from my boyfriends mothers garden that I had no idea what they were but now know due to this book. I'd been trying to find some herbs here but did not know the Turkish name for them and could not find them in the dictionary but again all the info I needed was in this amazing book. I have since sent it on to my mother so she can understand a bit about my new life. I'd recommend this to anyone.
