good for diabetics but almost every recipe requires liquid pectin which jam purists only use as a last resort as it can affect the flavour, colour and consistency of the final product.

Initially bought the booking having spotted an article about the onion chutney (The Guardian?) and was curious about Fraser Doherty's other recipes... The chutney was to die for but my only dismay was that although recipe stated 4 - 6 jars it didn't say for how many grams it was per jar and ended up with only 2 jars of about 380 grams per jar but the taste of the chutney more than made up for it... Would have loved to have made some of the jams suggested in the book sugar free which was another reason for purchasing the book but due to not being able to find the grape juice required whithout breaking the bank ended up compromising by reducing the sugar.... This is why it's 4 and not 5 out of 5 but Doherty's enthusiasm and simplicity in outlining all the recipes makes it accessible/poosible for anyone to take up this culinary skill and have found him to be a huge inspiration when it comes to jam making and this book is definately one I would recommend. Can't wait to try some of the other recipes in the book....definately one to keep to hand!

This is an essential book for your kitchen! It's filled with unique recipes for making your very own 100% fruit based SuperJam, follow with a plethora of tart and cake recipes to fill with you new jam.

Nice ideas
Good ideas but the only problem is you need grape juice and I have been unable to find any in the shops I usually go to (Sainsbury's and Tesco)
