About the Author

Carolyn started her career at the top working as Head Chef for a restaurant but eventually switched to journalism where, in 1977, she was able to combine her love of food with her flair for words when she became Deputy Cookery Editor for Woman magazine. Over the years she has freelanced for numerous women's, parenting, education, food and lifestyle magazines as well as for PR companies specialising in food, nutrition and health. She has written over 40 books and has taught both cookery and journalism at further education level. She has written many books for Foulsham and sold over 92,000 books in 2006 alone.

I received this book as a present when I started uni and have found it indispensible, both as a source of meal ideas and for basic cooking advice. I'd been veggie for 6 years by the time I went away to study, so finding veggie versions of tradional meat based meals was never something that concerned me much (although there are a few tasty ones in the book), but as my mother doesn't like to cook much, I needed to learn how to cook and find some alternatives to pasta and tomato sauce and expensive frozen meals! The cooking advice is simple but effective and the recipes, whilst quick and simple, are interesting. From a budget point of view, the book is excellent as the recipes make use of a few basic (and mostly cheap) ingredients and can be easily altered to suit whatever vegetables or leftovers you may have. I have other veggie cookbooks with much fancier recipies and beautiful photos but this is the one I come back to for everyday meals. It's unpretentious and great for anyone, student or not, who needs to budget or who likes easy and yummy food!

I got this book as a present before leaving to start Uni life last September! Since I'd never cooked anything more complicated than fairy cakes, my Mum was understandably a bit concerned that I'd live on pot noodles and baked beans on toast, so decided to get me this fantastic little book!

I can't praise this book enough! First off, it does actually tell you *how* to do certain things, like dice, shred, fold and whisk, and how to actually cook vegetables, rice and pasta. Pretty basic yes, but I have met people at Uni who've never so much as heated up a can of baked beans or made a bowl of pasta in their lives! So it's pretty good for complete beginners.

The recipes are yummy. They're divided into different sections; there's snacks, light meals, vegetable dishes, roast dishes, pasta dishes, rice dishes, pulse dishes, and desserts (of course!). There's serving suggestions, ideas of what else you can throw in, and even tips on how to keep the cost down. The instructions are fairly straightforward, unlike some this cookbook doesn't seem to be written in a totally foreign language!! The recipes themselves are very tasty, there's a lot of variety and there's pretty much something for everyone.

I would be totally lost without this book. Don't be fooled into thinking it's just for veggies, most of these recipes are pretty healthy (especially in comparison to most student diets!!) and incredibly tasty. Get this book, it's almost as essential to student life as a drinking fund and an overdraft (well they're the same thing really, and I did say 'almost!')

I bought this book after being a vegetarian for around 5 years, without doing a lot of cooking for myself. I found areas such as basic cooking skills absolutely invaluable for a relative new starter like myself. The book has all sorts of recipes from, really clever food to impress the parents with (the Mushroom Stroganoff went down particularly well), to quick and easy things with store cupboard ingredients. Brilliant for a nice easy introduction into meat free food.
