I have never cured before and I was looking for an introduction to the subject. This book fits the bill, it is easy to read and helps you understand the basic principles involved. My aim is to start smoking but have learned, I think, that I have to master curing first. The only criticism that I have is the value for money aspect when it first arrives, its not a weighty volume and I at first felt I was being taken for a ride. BUT NO it is instructive, appears to cover all that is required to begin curing and debunks the mystique. It has certainly started me on my way.

When I received this book I thought I had received the wrong book as the cover was different from the one illustrated on the Amazon site. I then realised it was a later edition. I have never read any of Paul Peacock's books and knew nothing about curing and smoking. After reading the book I am sure I could now cure and smoke food with constant checking of the instructions. I like his witty and tongue in cheek remarks which helped me remember important tips and valuable instructions. From building your own simple smoke house to smoked salmon, this book has it all.

Gave this as a present to someone who hates cook books. He really appreciated it as it gave him some new ideas on how to improve on what he was doing rather than just being a recipe book.
