I like the recipes in this book and find them easy to follow. Having read the reviews of two others who feel that there is too much water in the recipes for the British taste do these reviewers realise that the US pint is only 16 fluid ounces and not 20 fluid ounces like our British pint?

Clear instructions and bountiful illustrations peppered with helpful tips ensure that even a complete beginner gets good results. The sections on preserving fish and meat (including pates) were especially welcome - so often missed out in other books. I'd agree with an earlier reviewer that many of the recipies (particularly jams and jellies) consistently use too much water, and I 've also found that some of the chutneys use too much sugar for UK taste, but the book encourages you to experiment and develop recipies to personal tastes. Preserves made from recipies from all over the world now make my larder look like Ali Baba's cave; friends and relatives love to receive them as gifts, and commercially bulk-made pickle and jam will never appeal again.

Just a quick point for all of you out there who buy this book.

Its a delight to read, clear and entertaining. When you create your pickled masterpieces you really feel that you are doing something wholseome.

The smell around the house is worth getting it alone!

However, we have tried about 10-12 recipes from the book and they consistently seem to overestimate the amount of water by a factor of two, which is weird. Maybe US water is different to UK water? Who knows. The recipes are delicious, just be prepared to adjust the liquid quantities...
