About the Author

Gilli Davies is a noted authority on Welsh food, who teaches at her own cookery school 'Good Things at Glebe Farm', and works with the local Health Trust on cookery classes. She began her career over twenty years ago with a certificate from the London Cordon Bleu School of Cookery, and has since held a number of catering posts, including Head Cook at the Open Air Theatre in Regent's Park. She has published Lamb, Leeks and Laverbread and A Taste of Wales. Gilli has written for various publications including Taste and Country Living and is a regular broadcaster, on programmes ranging from Radio 4's The Food Programme and Radio 5 to UK Living and a 10-part BBC television series A Taste of Wales.

My husband gave me this book as a present a few days ago. To be honest I have come across books on organic cooking before but I never thought that it was worth buying them unless I found that there were some recipes I wanted to try out, organic or not. To me what makes a recipe organic is simply the ingredients you use. The author explains that organic cooking is different because as the ingredients have a lot more taste you need less ingredients in a recipe. She almost convinced me but then, looking through the book I found out that actually the recipes in this book are recipes she collected during her trips, many of them classics! I am all for organic food and it does indeed taste a lot better! I am sure that it is a lot healthier too because who would choose to eat food laced with pesticides if they didn't need to? Probably no one, not even those who sell them! But the problem for me is that I wouldn't mind paying a bit more for better food only I would need to know that the food is indeed better and no one can guarantee me that, so often I don't bother! The only food I know is really organic is what comes from my own garden. I don't even trust the farmer around me completely because I am not there to see what they do!

This said this book has no photos and the recipes are very simple, maybe a bit too simple if you are not a beginner. I have marked a few I want to try but I will be honest, if I hadn't had it as a present no way I would have bought it! I have loads of very good recipe books! I also wonder how someone who is so much on good quality food destroys it by using the microwave.
