About the Author

Margaret Ford discovered her interest in cake decorating at catering college in Aberdeen. She began to design original and innovative equipment and, about ten years ago, with her husband David, created the Celcakes specialist range of products for cake decorators. Margaret has travelled extensively in the UK and overseas demonstrating her skills. She regularly visits the US and Holland and has also taught in South Africa, Australia, New Zealand, Japan, Hong Kong and Argentina. Since writing books 1 and 2 Nicholas Lodge has continued to travel around the world, teaching and demonstrating sugarcraft. In 1991, he moved from the UK to live in Atlanta, Georgia, USA, where he set up the International Sugar Art Collection (ISAC). In 1995, the International Sugar Art Gallery was opened in Japan. This Tokyo based school and retail operation serves as the centre for Nicholas's Pacific Rim operations. Nicholas is heavily involved in ICES, an America-based convention that is held each year. In 2001 he was inducted into the Hall of Fame. He is the youngest person that this honour has been bestowed upon.

Would recommend this for all cake decorators, some items may be beyond the scope of the novice, but the book sets the standard. Some brilliant ideas and all should enjoy it and aim to acheive some of the wonderful results.

As I have books 1 and 2 of these series, which I am in love with for they give a brilliant overview of all possible cake decorating techniques, I was slightly disappointed by this book. Don't get me wrong, it is not a bad book and better than quite some other cake decorating books, my disappointment is only based on the contrast with books 1 and 2.
Where #1 and #2 cover real cake decorating techniques, to be handled without much fancy equipment and very useful for beginners as well as those who have enjoyed cake decorating for longer, book #3 holds mostly extra techniques for which special equipment is necessary. It is nice to know what molds are available, how to use them and even how to make them, but this information is easily found online.
The book holds a couple of nice cakes, but for a SCHOOL of sugercraft, not enough classes are being given. It is a book that I have browsed through only once while my other books are used much more often. My advice would therefore be to stick to books 1 and 2 which covers all the basics you need, maybe with added books by Debbie Brown, who covers a range of cakes from start to finish.

Excellent book which accompanies another two. They take through a series of lessons and start from beginner to advance. Book 3 helped me through my final exam when I had to a pastilliage centre piece. These books give you the techniques, all with step by step colour pictures, so even the home cook can achieve great results. There is a great resource of suppliers for the special equipment you will need for some of the recipes at the back of the books.
