I bought this book as I have recently started working in a professional kitchen and its a great asset!
Very informative on various species of fish, from storing it, cuts of fish, to the equipment used in each process. It even came with a DVD!
Interviews with businesses in the industry provides and insight to the world of fish.
A must have for any budding chef or anyone interested in fish/seafood.

This book contains everything I wanted to know about fish and the preparing of it plus it recommends the best ways to cook it as well. It explains how to skin, gut descale and prepare all sorts of fish which is what I was looking for, I would recommend this to any budding fish cook or just anybody who loves cooking and eating fish. Fish cooking is so much easier when you know what you are doing is correct and less time consuming than struggling with something you really haven't a clue how to tackle!

Not enough info on different varetys of fish and how to prepare them, this book is full of jaw-jaw however! ; ( Can not reccommend!

Terrific book, buy it with a good filleting knife and then prepare all your own fish., never be scared of cooking and serving fish again.
