Book Description

27 April 2009

The comprehensive handbook for dehydrating foods at home.

Dehydrating is one of the most effective ways to preserve food for maximum nutrition at very low cost. Sales of dehydrators are soaring as many cooks reject the suspect ingredients in commercially prepared foods. Dehydrating with the recipes in this book is one way to control all ingredients and please the whole family.

Recipes for dried ingredients include herbs and seasonings, fruits, fruit leathers, vegetables and beef jerky. These nutritious ingredients are included in delicious recipes such as:

Beef and potato stew Chicken pot pie Vegetable lasagna Zucchini and red pepper fritters Dried tomato and basil polenta Mushroom, herb and white wine sauce Strawberry rhubarb tarts.

These recipes appeal to a wide array of tastes, feature contemporary ingredients such as whole grains and work equally well in a home kitchen, on an RV, on a boat or at a campsite. Recommendations for buying a dehydrator and storing dehydrated foods are also included.

Easy-to-follow instructions with specific time guidelines and best practices and the latest data on food safety make this the ideal dehydrating guidebook and cookbook.

Review

This one's an encyclopedia. It's a good resource for recipes on the spot but may be overwhelming if youre starting out. I like to have it on the shelf in case I'm looking to expand ideas but its recipes are so literal (an advantage to many) that I prefer to use this to brainstorm my own ideas from rather than to use it each piece. This could apply to all levels of home preservers but I like it best as an on-demand reference as opposed to a manual. Dehydrating is one of the most effective ways to preserve food for maximun nutrition at a very low cost. The Dehydrator Bible recognizes that cooking is a blend of science and art. Co-authors Jennifer MacKenize, Jay Nutt and Don Mercer combined their professional expertise to take the guesswork out of drying a variety of foods, and sharing successful techniques and recipes.

About the Author

1.0 out of 5 stars Too many recipes 13 July 2010
Format:Paperback|Amazon Verified Purchase
there are too many recipes in this book and not enough information on the actual subject of the dehydration of foods. The foods listed and described (poorly) for dehydrating are selective and very restricted. The extrapolation, of the few details that are given, for seemingly similar items just do not work. My wife and I would NOT recommend this book for those beginning, or seeking information, on dehydrating foods. We regret buying it. To call it a 'bible' is a misnomer.

4.0 out of 5 stars All the information you need is there... 11 May 2010
Format:Paperback|Amazon Verified Purchase
... But sometimes, the way the book is set out, makes it hard to find in a hurry. The best way to use this book is to read the chapters first, then start dipping in to the recipes, referring back to the chapters where necessary, which can mean up to five pages book-marked at once when making one recipe up!

Having said that, the book is comprehensive, and is a useful tool for the new dehydrator user.

1.0 out of 5 stars A waste of money 25 Sep 2012
Format:Paperback|Amazon Verified Purchase
The « Dehydrator Bible» is really a misnomer, as some buyers have pointed out, because it is not a guide on dehydrating foods, which requires a long process of learning, namely by trial and error. This book does not help you to overcome the initial mistakes and pitfalls of a novice: even the basic techniques are not dealt with in detail for those, like me, who bought the book as a manual (or «bible», if you like) on the subject.
The accent is definitely on the 400 recipes it boasts of, in which I was not the least interested. So if you are looking for a initiation on this subject, buy instead Mary Bell's Dehydrator Cookbook, which is a much better buy, although a little bit outdated.

5.0 out of 5 stars Bible is the right word.
It really is a bible. Absolutely brilliant. Don't know how I would have managed without this book after I was treated to a dehydrator which didn't come with a very good manual.
