About the Author

ALAIN PASSARD is chef and owner of restaurant l'Arpège in Paris, which has retained a three-Michelin-star ranking since 1996. His kitchen garden in Fillé 230 km from Paris supplies the restaurant, and is run completely organically, without even the use of machines. He lives in Paris.

Well, some of the art is missing, that is for sure 1 May 2015

Alain Passard is the chef and owner of the three star restaurant L'Arpège in Paris. A few years ago he dropped meat from the menu in order to focus on vegetables, and has retained all three stars. Several of my friends have eaten there, and believe they are all well deserved.

One of the great joys that they all mentioned was how beautiful the dishes looked, and I was eager to read this book, in part to learn if Passard has any particular techniques that would improve my own preparation of vegetables, but primarily to learn how to present the dishes with flair and excitement.

The recipes are fine, although I thought that [[0547232799 Essential Pepin: More Than 700 All-Time Favorites from My Life in Food]], especially with the enclosed CD demonstrating particular techniques, was just as useful.

But it was impossible for me to learn anything about presentation -- there are no photographs, just full page schematics made from construction paper [?] that gave me a rough idea of how to plate the finished dish, but not enough to achieve any particular result.

At the end of an hour's reading, I reluctantly returned the book to the shelves, finished my coffee, and went home.

I waited a year to receive this book!
I loved this book! it is just vegetables, no lard. I am daily using the recipes. This is the first time I order a book and I an use daily all the recipes. Live healthy, it is worth it.
