I BOUGHT THIS BOOK IN THE BELIEF THAT IT WOULD HAVE LOTS OF RECIPIES TO MAKE A WIDE VARIETY OF THE TYPES OF BRITISH/EUROPEAN SAUSAGES AND SALAMIS I WISHED TO MAKE.WRONG.THIS IS VERY AMERICAN,POOR RECIPIES WITH LIQUID SMOKE AND "PACKAGED BREAKFAST SEASONING MIX",MAKE YOUR OWN PROCESSED SAUSAGES RATHER THAN REAL ONES,AND BUY A BIG AUTOMATED COLD SMOKER!.I CAN GET MUCH BETTER RECIPIES MORE FITTING TO UK/EUROPEAN TASTE ON-LINE FOR FREE AND BETTER ADVICE TALKING TO A BUTCHER.

very disappointed in this book.i have been making all kinds of sausage for over 30 yrs.this book is for the ameteur's ameteur.the author uses old fashion tools from his knives to saran wrap.would not recommend it to a friend
