5.0 out of 5 stars Not just how to make bread., 16 Mar 2001
Format:Paperback
I am not often really impressed with a books content and layout upon opening a new book for the first time, but it has to be said that this is one of the most interesting books I have ever come across, it takes you buy the hand and gives lots of encouragement, I started reading it the moment it arrived and could not put it down, on browsing through, there are useful pages of Tips, Tricks and information to make a newcomer feel nurtured and not quite so scared of taking the plunge and experimenting with the 300 recipes on offer, it will be an invaluable inspiration and reference, should I ever get through all the Recipes.

I have bought a Bread Machine for my Mother and have just ordered a copy for her.

If you own or have just bought a Bread Machine, order this, it will not disappoint.

1.0 out of 5 stars If your in the U.K. don't bother with this book. 5 July 2001

Format:Paperback
This book is full of information, discriptions of the breads, cakes and jams, serving suggestions and storage are just some of the areas it covers. Beautiful book unless you live in the u.k. Most of the bread recipies list gluten powder as an ingredient, as yet i have not found this available in our shops. Some of the recipies also require bake only setting, my machine has 10 setting and sadly bake only is not one of them. My initial excitement with this book very quickly turned to dissapointment.

This book has loads of great recipes. I have only had it a couple of days but have already tried a few with great results, plenty of tips and hints this makes a good book for a novice through to an expert. Unlike others I have found it easy to find gluten powder locally in the UK (250g cost me 74p), try an 'easy weigh' type shop or a bread flour specialist shop.

Most technical books, and this is technical in addition to being 'another cookery book', are written by North American authors and initially directed to that market. Not only will recipes tend to use cup measurements rather than grams and mls or ounces (fluid or not) but they will sometimes include ingredients either completely unavailable in the UK or where there is not even a substitute (the flavoured 'chips' - a little like toffee - which are combinations of oil, sugar, and a flavouring of which cinnamon is probably the most popular are a prime example). If any one recipe is one of those, there is little chance that it may be successfully used. Some, such as Canola oil can be substituted by vegetable oil. For a vast majority of ingredients, you may need a dictionary of food as terminology can be vastly different.

For some ingredients, you will need forward planning and some ingenuity. Some ingredients can be found in unlikely places and health-food shops such as Holland and Barrett may help with things like egg substitute and some others. You may find some on-line from UK-based suppliers and there are a few that specialise in favourite US products and are mostly intended to supply the US and Canadian ex-patriots resident in the UK.

This is a large book with plenty of useful advice plus a wide range of recipes. Not all will work with your machine but many will. Some are available in two or three sizes, in effect, small, medium and large, to suit different machines. One or more should be usable with whichever machine you use. The author is a respected, well-known name on US TV and in magazines and who contributes to several web sites. I was previously a contributing editor to a certain site and I was recommended this book by two of my US colleagues.

5.0 out of 5 stars Bakery bread at home 26 Oct 2010
Format:Paperback
This book is AWESOME. Bread-making was a ritual in my family when I was growing up, passed down from my grandmother to my father and on to us kids. Weekends my Mom worked and Dad kept us entertained baking bread--proofing the yeast, kneading the dough, watching it rise, punching it down, forming the loaves--it took almost a whole day, but when it was finally pulled out of the oven, heaven! Well, when my Dad got one of the first bread machines years ago, I followed suit, but have always been disappointed with the results ... until the arrival of this book. It is the first time that I've gotten real bread results from my bread machine. Soft, fragrant, well-risen and bread that lasts for more than a day. Not to mention all the whole wheat and whole grain recipes. I live in Italy, and was worried about the gluten issue (really a must to get the best results), but then I found it on an organic flour website, along with all the other flours mentioned in the book, so even that has not been a problem. If you have problems finding gluten, try a health food store--vegans use it to create a protein substitute.

I can't recommend this book highly enough. If you love bread, you will not be disappointed.
