Product Description

The baking tradition is one of the richest and most varied aspects of Ireland's culinary heritage. From earliest times breadmaking has been an integral part of daily life in almost every home and it is still a living tradition. In the Ballymaloe Bread Book Tim Allen shares his enthusiasm for bread baking with more than a hundred recipes for every conceivable type of bread, from simple scones and soda bread (not forgetting the famous Ballymaloe Brown Bread!) to pizza and focaccia and some exotic ethnic breads. And being the good teacher that he is, everything is eminently practical with nothing left to chance or guesswork. No matter how slight or extensive your cooking experience, The Ballymaloe Bread Book will become your constant kitchen companion.

About the Author

Tim Allen, together with his wife Darina, owns, manages and teaches at the famous Ballymaloe Cookery School in Co. Cork. Darina is the author of more than a dozen books and presenter of the Simply Delicious television series. Tim specialises in bread baking and this is his first book.

This book is particularly good for those who are happy to work with yeast. The recipes are very concise and the book is well layed out. If you are a keen soda bread baker, consider also the book entitled 'The Best of Irish Breads and Baking' by Georgina Campbell.

This is a very helpful and fun book to work with. The recipies are accurate and the tips are helpful. After struggling with the art of sourdough for some time, Tim Allens insightful advice has helped me enormously, and I am now the queen of sourdoughbaking. I have also experimented with the different types of sodabread, which I missed very much after moving home from Ireland.
Good book for learning basic baking kills and various breads from around the world

Lots of lovely sounding recipes. Would have been nice to have more illustrations. Have made the brown soda bread with my 10yr old son, which came out really well but, be warned, it was a HUGE loaf! Considering that soda bread is quite filling and really needs to be eaten on the day of making or it can be used as a doorstop, you would need to be feeding a small army to get through this...we've got 6 children and only managed to get through half of it. Consequently, I'll be halving the recipe next time. Also tried the butter and milk clusters which tastes lovely, but you're supposed to be able to pull the clusters apart when it's cooked...the only way these 'clusters' would have come apart would be with the aid of a hammer and chisel! Crust was very crisp, but not remotely chewy (phew!). I've just ordered an oven thermometer off here as I've got an inkling that my oven is getting hotter than it should (I've had problems elsewhere). Looking forward to trying the orange butter scones, they look delicious!
