Book Description

1 Mar 2008
This is the ultimate inspiration for tea lovers everywhere. Cooking with tea gives dishes an inimitable subtle flavour and there are so many varieties to choose from. The suggestions in the Savoury chapter make great dinner party dishes - choose from Tea-smoked Trout with Peas and Pancetta or Green Tea Tofu, Noodle and Cress Soup. The Puddings are all delicately scented like the heavenly Chai Custard Ice Cream and the Pears Poached in Camomile, Vanilla and Honey. "Sweet Treats" include lovely ideas to make as a gift, such as Earl Grey Biscotti and Apricot and White Tea Jam. There are lots of refreshing surprises in the Drinks chapter - the Vodkateani and Hot Tea Toddy will satisfy any kind of thirst. This cookbook is a beautiful and unique take on tea culture.

The logic of the WFI food editors assertion that tea is just a herb hits like a thunderbolt: use it to flavour broths, infuse custards and provide robust, subtle liquors for poaching, this handy little book is full of clear, inspiring, beautifully photographed recipies --Waitrose Food Illustrated

First Sentence
Cooking with tea might sound a little novel at first, but the edible leaves of the Camellia sinensis bush should be approached in the same way as any other dried herb. Read the first page
